The Boning Knife
The boning knife may get picked last when home cooks are choosing their knife teams, but that doesn’t mean it doesn’t play a vital role in any kitchen. Its long, narrow blade is perfectly designed to remove the thinnest silver skin from beef or expertly maneuver the narrow joints of a chicken.

There are several things to look for in a good boning knife. First is control. Is the grip solid and comfortable? When the handle gets coated with chicken fat (as it is certain to do if you are boning a chicken) can you still get a firm grip on it? An unsteady grip can lead to butchered meat and, possibly, hands. Just as important as control is sharpness; if the knife is not terrifically sharp out of the box, chances are it will never be so. Also key are maneuverability and flexibility, to ensure that the blade can get to all the corners and crevasses it needs to.

Every home cook needs a good solid set of knives.  Having a basic knife set will make food preparation easier, safer, and less time consuming.

Basic Kitchen Knife Care:

1. Keep blades sharpened.  Sharpen your knife each and every time you use it.  It will keep the blade sharp and if use properly will actually be safer to use.

2. Wash knives by hand in the sink with hot soapy water.  Do not put in an automatic dishwasher.  Dry knives immediately after washing.  Even if knives are made of stainless steel, over time sitting in water can corrode the blade and make the handle swell.

3. Rub mineral oil on wood handles periodically to maintain their luster. Lemon oil or any good furniture polish is good for feeding wood handled knives.

4. Although it may be tempting at times, refrain from using your cooking knives for prying, as a screwdriver, as a chisel, or for anything kitchen cutlery was not intended.
